The fourth and final of my recipes in collab with Tesco’s FRESH 5 campaign helping to get us all a little more excited about fruits and veggies by helping to make them more affordable.

Last up, I’m showcasing plums. One of my favourite fruits to stew into a delicious compote to have with porridge or greek yoghurt. This time I’ve gone with the latter, pairing thick greek yoghurt flavoured with honey and cinnamon with vanilla stewed plums and a crunchy maple roasted nuts. Need I say more. Enjoy!
Preheat the oven to 160 degrees celsius.
Wash and peel the plums. Chop into bitesize pieces.
Place the plums in a saucepan. Add enough water to cover the base of the pan and cook on a medium heat for about 5-10 minutes. Stir in the vanilla paste. Remove from the heat earlier if you want the plums to retain their shape, or cook for longer if you want more of a compote texture.
Meanwhile, roughly chop the mixed nuts or pulse in a food processor.
In a small bowl, mix the nuts with 2 tbsps of maple syrup and a pinch of salt. Transfer on to a baking tray and bake in the oven for 10-15 minutes until golden. They burn easily so be careful!
In a larger bowl mix the greek yoghurt with honey and cinnamon. Divide between two bowls, top with the delicious vanilla stewed plums and top with the maple toasted nuts.
